Kitchen Cops Scoring

They'll be wearing royal blue shirts with this logo on it, and a city badge.  That's a health department inspector.
And their boss is Lauren Rabe.

The scores inspectors put in their reports are the same ones we put on our Kitchen Cops report every Tuesday and Thursday.

The inspection reports are divided into 3 sections with different point values.  For instance, there are 3 points given for each violation in Section One.  Among the items in this section are Time and Temperature for Food Safety and Employee Health.  Each establishment has 3 days to correct the violation, and if they don't, Rabe says inspectors can shut the establishment down and  send them to court.

She also says the questions in the reports come from the Department of State Health Services and are intended to protect your health. 
"Someone might not think hand washing is important, but that person might be spreading salmonella," Rabe says.

That's one reason the reports also score the facility, food handler permits, chemicals, and protection from contamination.
"If you receive your food not at the right temperature that you think it should be, then definitely let us know.  let us know so that we can make sure the establishment is cooking at the right temperature and holding them at the right time both for cold and hot."

So it comes down to what Rabe calls culture.  How closely does management monitor the facility?
"It definitely has to do with the culture.  With any organization, your staff is only as good as strong as your culture."
