Food truck Friday: Matcha Konomi

A food truck that offers healthy food and drinks. 

Believe it or not, Matcha Konomi has been around for over a year. The owner, Michelle Fraedrick started her business right out of her own kitchen. "What we use and everything that we put in there is really high quality, it's not full of added sugars and preservatives," said Fraedrick. 

The owner started by selling her favorite drink, the Matcha Green Tea Latte right out of her home and delivering it throughout Corpus Christi."One day, I just made a big batch of it, and as I was putting it in the fridge, I decided maybe people would like this, something that isn't here, and it's good and delicious," said Fraedrick. 

The trailer eventually came and Fraedrick was able to cater to her customer needs. 

The menu includes food like different kinds of avocado toast, breakfast bowls and flourless muffins and bagels. Many of the items are gluten-free too, meaning even folks with dietary restrictions can enjoy them, however, the drinks are what have people coming back. 

The Matcha Green Tea Latte is the star of the menu. The drink was even sample to celebrities at the Academy Awards this year. "I can't believe that I created something that so many people liked, it's a little shocking and humbling in a way, I am very thankful," said Fraedrick. 

Matcha Konomi accepts cash, credit and debit. They are located at 3512 South Staples, Monday through Friday, 7:30am-3:00pm. Saturday from 10am-3pm. 

The owner is in the process of building a drive-thru shipping container, which will open soon.
